Sugar pie has been a traditional meal in Northern France and Belgium since sugar beet has been introduced in this area. There are many recipes, this one comes from family tradition.


Ingredients:

Short pastry (enough to make a pie).
Brown sugar (from sugar beet, also known as "vergeoise blonde" in northern France and Belgium)
Milk

Preparation :

Spread the pastry and cook alone (to avoid blowing up, spread lentil or any beans on a piece of greaseproof paper).

Meanwhile, mix sugar in some milk.

When the pastry is cooked, cover with the sugar (1cm or 1/2 inch) and put in oven (hot) for a few minutes.
